Strawberry Season is here!

I love strawberries they are one of my favorite fruits with the only exception being grapes! I always tend to overestimate how many I should buy at a time so I tend to have some leftovers. So I thought I would share some strawberry recipes that you can make at home because I imagine I'm not the only one that doesn't estimate well.

The first recipe is Strawberry Jam you can freeze when ready.

2 cups of crushed fresh strawberries

4 cups of sugar

1 package dry pectin

3/4 cup water

Mix the strawberries with sugar and let stand for 10 minutes. In a small saucepan combine the pectin and water. Bring to a boil for 1 minute.

Quickly pour the mixture in with the strawberries and stir. Allow to stand for 3 minutes before pouring into jars. Leave the containers with lids on for 24 hours. Place into the freezer and store until ready to use.

The Second recipe is a bit simpler but still a great treat overall. Strawberry Topping can be used for many different recipes including putting it on waffles, angel food cake, ice cream, and more.

You will need:

Pint of strawberries

2-3 Tablespoons of Sugar

After washing mash the strawberries into a liquid but not completely

Add a Tablespoon at a time of sugar

and adjust by taste. Top off with

Whipped Cream for a delicious summer treat.
